~Yummy Lasagna~

A few weeks ago, I decided to combine a few different lasagna recipes. The result was absolutely fabulous. So rather than write out the whole thing, here it is in pictures! Yummers yummers yummers....

Slice the zucchini, sprinkle with a little salt, and allow it to dry out. Boil the noodles. I did about half of the amount and alternated between noodles and zucchini. Rather than a low-carb recipe, it was a "lower carb" one. Brown the meat (we used ground turkey), and add in whatever other flavors you like. We used garlic, egg plant, rosemary, basil, salt and pepper. Chop up parsley and then spinanch. Add the parsley to the ricotta cheese. Alternate layers with each of the ingredient groups. Add final layer of zucchini. Add final layer of cheese. Note - should also top with fresh parmesean, but we were out so the mozzarella made due. Bake in the oven...and voila! A delicious dinner with plenty of yummy leftovers.
